It’s All Greek to Me: Chicken Souvlaki with Tzatziki Sauce

It was at a recent birthday gathering that I was inspired to write this recipe. We were at a local Dive bar that I had been to many times before but had never ordered food there. I’m not dissing on dive bar food, many have some of the most amazing food. And not all of the food there was bad. The chicken wings were great, fried crisp and golden, crispy on the outside and juicy on the inside. As a matter of fact all of the fried foods were great.

But, wanting something more substantial and the word “Greek” being part of the name of the place, you would think they would do Greek food well.  Unfortunately this was not the case. A friend of mine and I both ordered the Gyro’s. We awaited with anticipation for the yummy meats encased in warm soft flatbread oozing with mounds of Tzatziki sauce.

Finally, the wait was over. But where were the mounds of Tzatziki? The warm soft bread?? What arrived you ask? Lukewarm dried out bread spread with an almost undetectable thin layer of sauce and some “Ok” meat. If it weren’t for the fact that was famished (and had a couple of beers), I would have sent it back and requested more chicken wings or some other deep fried delight. Lesson learned. But, now I have been craving a really good Gyro ever since! So I decided to make my own. Here goes…..

Chicken Souvlaki (Grilled Chicken Skewers)

  • 1-1/2 pounds chicken breast
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 2 cloves fresh garlic, minced
  • 1/2 tablespoon fresh rosemary, minced
  • 1 dried Greek oregano
  • 1/4 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1/4 teaspoon fresh ground black pepper
  • 1/3 large red onion cut into pieces

Cut chicken breast into 1 inch pieces and place in a ziploc bag. In a bowl, whisk together remaining ingredients (except onion) and pour into the bag with the chicken. Seal the bag and massage marinade into chicken so that all of it is coated. Place in the refrigerator to marinate overnight. The next day, place chicken and onion on skewers and grill until cooked though. Serve with warm flatbread and Tzatziki sauce (see recipe below). and suggested condiments

Tzatziki Sauce (Yogurt, Cucumber Sauce)

  • 6 ounces full fat Greek yogurt
  • 1 cucumber, peeled and seeded
  • 2 cloves fresh garlic, minced
  • salt and black pepper to taste

Grate peeled and seeded cucumber into a bowl. Add yogurt and minced garlic. mix together and season with a small amount of salt and pepper to taste. Let stand for a few hours or overnight in order for flavors to combine. Stir before serving.

Suggested Condiments:

  • Grape tomatoes
  • Crumbled Feta Cheese
  • Fresh Baby Spinach or Field Greens
  • Pitted Kalamata Olives
  • Chopped Roasted Red Peppers
  • Sliced Greek Pepperoncini

Wine Recommendation:

  • Sauvignon  Blanc
